Gyutos are the workhorse of a kitchen and are designed to handle most kitchen tasks. At 225mm long and 57mm tall, this is a larger knife with a commanding presence. At 2.1mm above the heel the blade has been forged thin and features a brute de forge finish.
The gyuto is hand forged and features a go mai construction, with the outer layers being wrought iron (an old wagon wheel), a thin layer of pure nickel to limit carbon migration from a the high carbon core and a cutting edge of 52100. The handle is made out of a piece of lace sheoak with black and white G10 spacers.
